Brett’s Birthday

I would like everyone to meet Brett; my other half, my therapist, and my taste-tester, among SO many other things. We have been together for almost 2 and a half years, and what a wonderful 2 and a half years it has been! Brett had a birthday yesterday, (April 16th). We celebrated with food, of course. I made all of Brett’s favorite foods!

Chicken Teriyaki Skewers with Fresh Pineapple and Peppers

Bacon Wrapped Shrimp with Cilantro Ranch

I made Tiramisu for his cake, it is an Italian dessert with coffee and rum soaked ladyfingers layered with a mascarpone cream custard, and topped with shaved expresso chocolate.

This is his favorite dessert, and I decided to try and make it homemade. And it was so delicious! I bought the lady fingers from Kroger’s, and they worked fine but they were really small…so I think next time, I will try to make  them myself.

Next I just made a smorgasbord of appetizers. I made my pulled pork nachos which include layered cheddar, pepper jack and the new chipotle jack cheese and topped with queso fresco. In the middle of the cheese is sweet pulled pork and pickled diced jalepenos which add a nice kick of spice.

Next in line, I made fajita lime wings which is actually my mom’s famous recipe and comes with a funny story.

Back in high school, Brett and I were just friends. I threw a party in my cabin and Brett showed up with his friend, Aaron. By the end of the night, my place was full of people and we had no where to sleep. So a few of us decided to sleep up in my house, which was just up the hill. I woke up the next morning and had to go to work. I left with people asleep on the couches. My dad came home later that day and everyone was gone, expect for Brett and Aaron….who set up in my living room eating every single fajita lime wing that my mom had made the night before. My dad called me and said, “Devyn, there is two teenage boys in my living room, eating your moms wings…what should I do? Do you know them?”

So I can only assume that these wings fall under Brett’s favorite foods lol.

They are fried chicken wings tossed with lime juice and Taco Bell fajita seasoning. They are so easy to make and a crowd pleaser.

I also made pig skins, which if you have ever been to the Huntington, WV area, you know of Fat Patty’s. It is a bar and grill that serves great cheeseburgers of all sorts and this pork filled dream. Pig skins are simply potato skins with pulled pork. It kicks a potato skins butt any day of the week. Brett loves them!

The next item was chicken teriyaki skewers with pineapple and peppers. I marinaded the chicken overnight in Kikkoman teriyaki marinade. Then I skewered the meat and the pineapples with green and red bell peppers. I grilled them and constantly basted the skewers in a Lawrys teriyaki pineapple sauce until the chicken was cooked through.

The bacon wrapped shrimp we actually bought at SAMs in the frozen section. I have attempted to make this homemade but it’s a lot of work when you can go and buy the same thing already made, and it’s better.

The party itself was fun. I found these popcorn napkins at Walmart, and Brett LOVES popcorn. So we matched the table settings to the napkins and put a big bowl of popcorn in the middle of the table and threw popcorn all over the table.

I think he had a great birthday, and I felt very blessed to be able to give him that. Happy Birthday babe!
